This extraordinary coffee from the Fraijanes Plateau comes from Pablo del Cid and his family at Finca El Jardín, whose history with Snowy Owl stretches back years. Pablo himself visited us in Brewster early in his career, spending time and energy understanding the specialty market here in the Northeast. That experience, and the partnerships he has built with roasters in our region, shaped his vision for what Guatemalan coffee from his family could become.
This lot is crafted through an innovative Mosto Anaerobic Natural process: fermented for four days in sealed tanks with its own “mosto” (must, just before wine), then dried slowly in a greenhouse over 30 days. The result is a cup that reflects both place and passion: rich volcanic soils lend a distinctive body, while Pablo’s drive for experimentation delivers complexity and vibrancy. We taste amazing notes of strawberry, stone-fruits, and cream.
Pablo is not only a producer but also a customer-driven leader, guiding his family’s century-old farm into a new era of quality and sustainability. Beyond coffee, the del Cid family built Centro Educativo “Eusebio del Cid”, a school that now serves over 300 local students.
