Yellow Sunset Decaf

Decaf drinkers, this one’s for you! We’re thrilled to introduce our first anaerobic decaf coffee, for those of you who drink coffee for the flavor only. Gracie, our Green Coffee Buyer, tasted this in a blind cupping while visiting Colombia in the summer of 2024, and even she was shocked to learn it was a decaf!

Grown in Acevedo, Huila, Colombia, by Brayan, a passionate coffee farmer and member of the 2024 Forest Coffee producer group, this decaf is a true standout. (Read more about Brayan <<HERE>>)The cherries undergo a meticulous 120-hour anaerobic fermentation in a pulp made from cherry and dehydrated passion fruit. This innovative process infuses the beans with vibrant, fruity flavors.

After fermentation, the beans are decaffeinated using the sugarcane method. This process employs ethyl acetate, a naturally occurring compound in sugarcane, to gently remove caffeine while preserving the coffee’s rich flavor.
